Summer Portobello Burgers on the Grill

Portobello BurgerSummer is here! While most go to the grill with hamburgers and hot dogs, you can stay healthy with veggie burgers, veggie hot dogs or delicious Portobello mushroom burgers:

These quick and simple burgers are best served on top a whole-wheat bun and dressed up with your favorite toppings!

Serves 4


4 Portobello mushroom caps
1 tablespoon reduced-sodium soy sauce
Freshly ground black pepper
4 whole-grain burger buns
Optional toppings: ketchup, mustard, sliced red onion, and lettuce or sprouts


Preheat the oven to 400°F.

Use a spoon to scrape the gills off the mushrooms and discard the gills. Place the mushrooms stem side down on a baking sheet and lightly brush each with some of the soy sauce. Sprinkle with a little black pepper.

Place in the oven and bake for 10 to 15 minutes, until tender. Serve on the buns, topped with any or all of the toppings.

Per Serving: 125 calories; 2 g fat; 13% calories from fat; 8 g protein; 21 g carbohydrates; 6 g sugar; 4 g fiber; 434 mg sodium

Neal Bernard, clinical researcher and founder of the Physicians Committee for Responsible Medicine (PCRM), spoke at TEDxFremont conference recently. This horrible disease puts us at risk of amputations, heart disease and blindness. What is worse, Neal says, is that we are exporting this disease overseas. The truth is diabetes has never gotten better! With all our medicines and medical procedures it continues to grow and claim more American lives. He says glucose is needed in each of our muscle cells but to get in, it needs a key! If the lock is blocked, the key won’t work. What is blocking these locks? It’s FAT! That is what diabetes is, the lack of the cell’s ability to get glucose because the locks governing it are blocked by fat. Dr Bernard speaks of one participant in a study he did that changed his diet from fatty foods to fruits, vegetables, carbs, etc but no meat or oils. Soon this person’s diabetes disappeared! His erectile dysfunction disappeared as well. Can it be that simple? YES YES YES Change your diet and live a healthy life.
